| I used to think I knew something about the science of processed meats. As a young Ph. D., my first job was with Armour Foods Co. in Chicago working the Sausage Development Group. For the first several years of my career, I tried to apply science to the process of making sausage and ham products.
Almost 20 years ago, everything I thought I knew was turned upside down by Wolfgang Peter Ludwig, the owner and founder of Wolf-Tec. He proposed a completely different theory of protein extraction and curing that revolutionized the processed meat industry in the US.
By applying his passion and knowledge of meat processing, he discovered that protein extraction is optimum at very low temperatures, but higher temperatures are required to obtain the best possible distribution of curing ingredients and therefore, uniform color. His company designed and patented an automated massage process and other equipment that allows for the manipulation of temperature during the curing process and the production of consistently excellent processed meat products.
Wolf Ludwig’s company – Wolf-Tec has been awarded 10 patents and received the “Spirit of Excellence” award from Hormel Foods Co. on seven separate occasions.
So how did a man with no formal scientific training manage to completely redefine the science of processed meat manufacturing?
Wolf was born in Germany and learned the art of German sausage making as an apprentice in a small town in the Black Forrest. In 1967, at the age of 21, he came to the US and spent ten years learning the language while working for various meat processors and suppliers. In 1977, he formed his company and applied the knowledge he acquired in Europe to the development of improved technologies for the US market. Just 16 years later, Wolf-Tec was the first company to receive AMI’s Supplier of the Year Award.
Wolf-Tec is now managed by Wolf’s sons – Peter and Ralf who continue the tradition of excellence and knowledge in the field of meat processing (By the way, in addition to serving as co-principle owner and COO, Peter Ludwig is one of the top Grand Am race car drivers in the US).
However, Wolf hasn’t retired from the meat industry. He established the company WTI Ingredients and for the past several years has been producing products to enhance the safety of processed meat products.
Wolf Ludwig is truly a renaissance man. He and his family have contributed greatly to the meat industry. |
